Sustainable Food Solutions by Food Design Lab Eggshell Toothpaste Muscadet Wine & Climat Local Lactofermentation Network

Hosted by L'Ecole De Design Nantes Atlantique

This project is now archived and was part of DDW21

How to communicate the changing taste of Muscadet wine despite climatic instabilities? How to reassert the value of eggshell waste in France including the notion of circular economy? How to valorize the leftovers produces of market gardeners thanks to lactofermentation and short supply chain?

Sustainable Food Solutions by Food Design Lab

The eggshell toothpaste is a circular economy approach made from eggshell waste (egg co-product) at the egg factories exit. Poulette is an organic solid daily toothpaste for children that will teach the right ecological gesture for zero plastic waste from an early age. The toothpaste is made from organic eggshell powder for its calcium properties, mixed with other bio ingredients. Its container is also made from eggshell waste in order to replace plastic materials. Finally, to stay in the world of eggs, the packaging is moulded cellulose from egg packaging. A sustainable, environmentally friendly, compostable, biodegradable plastic alternative.

Muscadet Wine & Climat

Terre de Muscadet is a wine bottle based on a parametric design that allows to retranscribe in a tangible way the weather conditions in which the wine was produced. The shape of the bottle reflects its meteorological DNA (rain, wind, sunshine which constitute its terroir) and allows the consumer to be aware of the impact of global warming on the wine. The formulation of the glass of the bottle would be made from natural resources and co-products of the terroir in order to be part of a circular approach. This project allows the consumer to become aware of climate change and to better understand it through a bottle that is a communication support for the winemaker during the tasting with the consumer. Bocaux Locaux is a local lacto-fermentation network that can be implanted in any city or urban area, in partnership with La Poste, the french mail delivery system. A low impact website is designed to inform and reassure the consumer. The product is distributed in reusable and returnable glass containers, with a thermal printed label explaining where the vegetables come from. The goal of the project is to valorize the unsold produce of local market gardeners thanks to the process of lacto-fermentation, creating a network of producers and consumers in a short food distribution circuit as well as avoiding food waste and encouraging probiotics consumption. The market gardeners can distribute the jars at their own pace to their customers at the same time as they sell their produce, which allows them to change the seasonality of the products and create an added value to vegetables which would be lost otherwise. The jars are reusable, as they are consigned and are returned either to the market gardeners, either picked up at the consumer's house by La Poste. The label is plastic free, printed with a thermal printer, and displays a QR code linking to a website explaining to consumers the
