Innovating Sprouts Gastronomy is a project that explores innovative methods for growing and presenting sprout food, aiming to deepen people's connection with nature through their diet. The next time you look at your food, take a moment to consider what it truly is and where it comes from.
WHAT are you eating?
Food is a fundamental part of our daily lives. Most of us rarely stop to consider what food truly is, how it was made, or where it came from. When thinking about food, people tend to focus more on its appearance, nutrition, convenience, or taste, rather than its origins or the processes that brought it to their plate.
More-than-human food
All food ultimately originates from nature, the more-than-human world. This connection between humans and the non-human world is strong, yet people rarely recognize it at the dining table. How can we enhance awareness of this relationship with nature? We chose sprouts because they are highly nutritious, easy to grow at home, and quick to cultivate. We see opportunities for innovation in both their growth process and food presentation.
Innovative Sprout Food
This project investigates new presentations of sprout food, offering people new opportunities to include them in their diet. We developed innovative methods to produce the sprout food through first-person research into the growing experience, followed by participatory sessions in which participants shape their imaginative food forms for different scenarios. We gathered insights into the values people associate with and the relationship between the form of food and the eating experience. By combining findings from both studies, we designed a range of sprout products that could be integrated into daily life and meals. Our goal is for the vibrant, living energy of sprouts in food to inspire a deeper awareness of the strong connection between humans and the more-than-human world.
